The first tree-to-bar chocolate maker to explore the science and the art of aging dark chocolate.
To’ak’s (pronounced Toe-Ahk) mission is to transform the way the world experiences dark chocolate, elevating it to the level of vintage wine and aged whisky.
Drawing from tactics employed by winemakers and whisky distilleries, To’ak is the first tree-to-bar chocolate maker to apply this principle to chocolate.
To’ak sources its chocolate from the rarest and most prized cacao variety in the world, from old groves we discovered in the valley of Piedra de Plata. To’ak is currently working with conservationists to nurse this variety back from the brink of extinction.
To’ak is born and based in the native origin of cacao. Our work starts on the farm and ends with a bar of chocolate. We’re one of the few tree-to-bar chocolate-makers in the world.
To’ak makes single-origin dark chocolate like a French winemaker produces vintage wine. Every year, To’ak releases a single Harvest edition—an expression of the unique growing conditions of that particular harvest year.
To'ak treats chocolate-making with the same care and precision that goes into bottling a fine wine.
I came away impressed by their fabulous, deep-flavored chocolate, like nothing I’ve experienced before.
The world’s rarest beans. The longest production and fermentation process. And all done by hand nonetheless.
Seasonal selection of three different Harvest editions (9 harvest mini bars in total) and three different Aged editions (9 aged mini bars in total).

To’ak has always been about more than just making chocolate. Born from a rainforest conservation project in 2007, To’ak is dedicated to preserving an ancient cacao variety and transforming the way chocolate is valued throughout the world.
We source our cacao from family-owned organic farms in the valley of Piedra de Plata. Cacao from this famed appellation was officially designated “Heirloom” by the Heirloom Cacao Preservation Fund in 2015.
To’ak has teamed up with Third Millennium Alliance (TMA), a nonprofit rainforest conservation foundation based in Ecuador, to preserve and restore the world’s most historic cacao variety.
To’ak chocolate is entirely produced in Ecuador, from tree to bar. We pay cacao farmers the highest price per pound in the industry—up to 700% above the the local farmgate price. Our packaging is handcrafted by some of Quito’s finest artisans.

This was an amazing experience! Everything about it amazing: the packaging, the hand written note, and of course the chocolate. I’ve never had anything like it and I’ll definitely be ordering again.

The chocolate bits have deep flavor and crisp finish. There is no bitterness from having a high percentage of cocoa. The powder for hot chocolate is also delicious.
